The poker software plays the games in U.S. dollars. But, your account holdings will be held exclusively in GBP. When you buy in and cash out from WSOP.com you will be depositing and withdrawing in GBP.
When you go to a table and buy in to sit down to the games, your GBP will be converted to USD at prevailing rates for the day. When you get up from the table and funds from same-day play are returned to your bankroll, it will be done at the same rate that you brought the funds to the table.
There are certain circumstances in which the exchange rates that the funds at the table are not converted back at the same rate that they were originally exchanged at. An example of how this would be the case: Let’s say that you registered on Wednesday for a tournament that was going to play out on Saturday. At the conclusion of the tournament on Saturday, if you had cashed in the money, your funds from this win would be converted at the prevailing rates on that day. This could work for you or against you, and over time it tends to even out.
All exchange rates will be held at a consistent rate for monies brought to the table and removed from the table on the same calendar day, but the aforementioned type of example will see slight variations in the rates that funds are converted.
